This Mashed Cauliflower And Gluten-Free Gravy Will Change The Way You Feel About Mashed Potatoes!



Cauliflower is a great food swap you can use instead of less healthy alternatives. From now on, I'm making mashed cauliflower instead of carb-filled potatoes!


Not a fan of mashed potatoes? I know how you feel – way too high in carbs, way too bland in taste, and fairly light on vitamin and mineral content. But what can you make just as easily for a big Sunday dinner or a big meal with family and friends?

Instead of potatoes, reach for cauliflower. This will give you a gluten-free option for a great side dish, and a vehicle for gravy – something everyone loves.

Why Cauliflower?

Cauliflower is part of the cruciferous vegetable family, like broccoli, Brussel sprouts, and cabbage, which means it’s high in nutrients, fiber, and vitamin C. In fact, one serving of cauliflower gives you 77% of your daily recommended dose of vitamin C!
Cauliflower is anti-inflammatory, anti-cancer, and helps you digest food more easily and efficiently. Chemical compounds in this cruciferous veggie even have antioxidants to help clean and super-charge your blood, helping your body fight off free radicals that cause damage and lead to cancer.

Mashed Cauliflower

Keep this recipe close for your next big meal and wow everyone with this amazing dish. The best part is, it looks just like mashed potatoes, so you may even fool some of your friends into eating more healthily.

Ingredients:

2 heads cauliflower, washed and cut into large pieces
2 tablespoons extra virgin olive oil or butter
½ teaspoon celtic or Himalayan sea salt

Instructions:

  1. Steam cauliflower pieces until very tender.
  2. Puree cauliflower in a food processor while adding olive oil and salt.
  3. Heat in a casserole dish in the oven at 350°F for 20 minutes serve

Get On The Gravy Train

Now that you’ve got your mashed cauliflower, it’s time to make the gravy! This gravy recipe can be made with or without the pan drippings from a roasted chicken or turkey; if you don’t use drippings, the onions will still allow the gravy to thicken. Thyme, onion, and garlic not only make this gravy delicious, but really good for intestinal health.


Herb Gravy

Ingredients

1 quart chicken stock
2 medium onions, coarsely chopped
2 cloves garlic
½ teaspoon celtic sea salt
1 tablespoon thyme, chopped
Pan drippings (from roasted chicken or roasted turkey)

Instructions

  • In a medium saucepan, heat the chicken stock, onions and garlic to a boil.
  • Reduce heat and simmer for about 30 minutes until onions and garlic are soft.
  • If you’re using pan drippings, pour them into the saucepan.
  • Now, blend the stock-onion-drippings mixture in a blender until smooth.
  • Place mixture back in your saucepan and reheat. Season with salt and thyme.
Now you’ve got the perfect topping for your perfect “Mashed Potatoes”
