Supercharge Your Gut Health With These 20-Minute Chocolate Quinoa Bites




It’s possible to eat delicious food while still taking care of your health. There has been a surge in these “low fat”, “fiber filled”, “low sugar” products that sound great, but really don’t deliver on their promise of health. Most of these conventional health foods are filled with unhealthy preservatives, sugars, and chemicals. Whole, organic products are the way to go.

Chocolate Quinoa Bites

Here’s what you’ll need for this fantastic snack that will leave you satisfied, without the unnecessary fillers.
  • 1 cup of cooked quinoa
  • ⅔  cup of water
  • 12 whole organic dates, no sugar added
  • ½  cup of whole organic raw almonds with skins
  • ⅓  cup of organic grated coconut, unsweetened
  • 2 – 3 teaspoons of water
  • ¼  cup of organic dark chocolate chips

Directions

To make these tasty treats, you’ll first need to add the dates to a food processor and pulse until the form a ball. Remove the dates and set them aside in a bowl. Next, using the food processor again, pulse the almonds until they are finely minced, but not turned into almond flour.
Add the dates back into the food processor, along with the almonds, coconut and cooked quinoa. If you don’t have any cooked quinoa, cook ⅓ of a cup of quinoa and wait until it has cooled to room temperature before adding it to the other ingredients. Pulse all the ingredients until they are well combined and move the mixture to a large bowl.
Slowly, add teaspoons of water to the mixture until it begins to hold together. Once you have a cohesive mixture, you can decide the shape you want them to take. You can lay them out into a tray to form bars, or roll them into bite-sized balls.
For the chocolate, bring a small saucepan of water to the boil and place a bowl over it, making sure it traps the steam but does not touch the boiling water. Add the dark chocolate chips to the bowl and stir, slowly melting them. Once the chocolate is melted, you can drizzle them over the bars, or dip the balls into them.
Refrigerate your balls or bars until the chocolate has set. You can store these delicacies for several days in your fridge in an airtight container, or make a big batch and store them in the freezer when you need some emergency healthy snacks.

Dark chocolate is also great because it’s full of cancer-fighting antioxidants that protect your body from free radicals.
