This Organic Apple Pie Chia Pudding is not only mouth wateringly delicious, but it is also the perfect "make ahead" breakfast recipe, which is to say it can be prepared days in advance.
Personally, I love eating chia seeds for breakfast, not only because they have excellent nutritional value but also because they expand 10 times their original weight and size when combined with water or some other liquid, which then helps the body stay hydrated, satisfied and full. Because they have a higher content of omega 3 fatty acids than any other plant based food, they also help to fight inflammation in the body, which reduces the chance for a wide range of dangerous diseases, including heart disease and Alzheimers. Furthermore, this incredibly easy to make recipe is packed with brain-boosting walnuts which are also known for their health benefits, including being effective at fighting cancer!
Serves: 8
Ingredients (use ORGANIC ingredients where possible)
- 1 cup chia seeds
- 6 cups coconut milk
- 2 teaspoon apple pie spice, more as desired
- 2 teaspoon vanilla extract
- 1 apple, shredded
- 5 tablespoons maple syrup
- 1 cup coconut flakes
- 1 cup chopped walnuts
Apple Pie Spice (use NON IRRADIATED ingredients):
- 2 tablespoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- 1 teaspoon ground ginger
- Mix all these ingredients together in a bowl with a butter knife or spoon or even by hand. Whatever you prefer.
Instructions
- To make the chia seed pudding, mix together all of the ingredients except the coconut flakes and walnuts. Place in the refrigerator overnight.
- To serve, place some of the chia seed pudding in a bowl. Sprinkle with some of the coconut flakes and walnuts and the Apple Pie Spice and your ready to eat!
